Roasted Beetroot and Apple Salad

A delicious chaos on a tray never looked so good! This roasted beetroot salad drizzled with delicious balsamic vinegar topped with crisp apples is fantastic for solo-lunches or dinners.

What makes this roasted beetroot salad recipe so special?

Apart from the roasted beets, the earthy, sweet and sour balsamic vinegar, crunchy bites with crisp apples are packed with a complex yet delicious flavor!

It is planet-friendly ( no waste and you are practically putting all the veggies to use) and ultra-delicious. Mic drop!

This requires just one roasting tray! No need to wash dishes upon dishes while you're through with this recipe, I promise.

How to make the salad:

  • Add the chopped beetroot, carrots, and red onions to a roasting tray.

  • Pour maple syrup, fennel seeds, cumin, salt, and pepper and mix well.

  • Roast for 30 minutes.

  • Take the tray out. Remove onions, add bread and walnuts, and roast again for 10 minutes.

  • Take the tray out, add the salad dressing, arugula leaves, and apples and mix well.

  • Enjoy!

Before we get into making this balsamic roasted beetroot salad, here are some tips for roasting beets the right way:

Tips for roasting beetroot:

  • Use small-sized beetroots as they take less time to roast in the oven.

  • They are usually sweet and tender in the middle.

  • I usually peel the skin off, as it tastes bitter; however, it is your preference. 

  • Halfway roasting, take a fork and stick it into the beets to check if they are nicely cooked; if not, allow them more roasting time.

  • Cut into small wedges, so it takes less roasting time.

I also love this recipe because it can be served with burgers, hummus, or a filling of shawarma! The flavors are so versatile that I usually have this for breakfast as the apples make my mornings sweeter.

Roasted Beetroot and Apple Salad

A beetroot salad recipe has never been so crunchy, sweet, and mind-blowingly easy to make! Get your sheet pans and let's get this roasting started!

  • Roastig Tray

For roasting vegetables

  • 250 grams beetroots (cut into wedges)

  • 130 grams carrots (cut into match sticks)

  • 80 grams red onions (quartered)

  • 2 teaspoon maple syrup

  • 1 teaspoon oregano

  • 1 teaspoon fennel seeds

  • 1/2 teaspoon cumin

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper (extra virgin)

  • 70 grams bread (or gluten free bread)

  • 1/2 tablespoon walnuts (roughly chopped)

For salad dressing

  • 2 tablespoon olive oil (extra virgin)

  • 1/2 tablespoon balsamic vinegar

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

To serve

  • 160 grams apples (thinly sliced)

  • 1 cup arugula leaves (or watercress)

  1. Preheat the oven to 200°C.

  2. On a roasting tray line baking paper. Cut the beetroot into wedges, carrots into batons, and red onions into quarters. Pour maple syrup, oregano, fennel seeds, cumin, salt +pepper, and mix everything evenly. Place the tray in the oven and roast for 30 minutes.

  3. Meanwhile, slice the bread and roughly chop the walnuts. Then, make the salad dressing by combining balsamic vinegar, olive oil, salt, pepper and set aside.

  4. Take the tray out and remove the onions. Sprinkle the bread and walnuts in the tray for 10 minutes. Then, remove the tray out of the oven. Once the vegetables have cooled down, mix everything together.

  5. Spread sliced apples,arugula leaves and mint leaves in the tray and pour the salad dressing while mixing everything together.

  • To reduce roasting time, use small beetroots.

  • Experiment with other leafy greens such as spinach and watercress.

  • To avoid uneven roasting, scatter the vegetables a little further from each other.

  • To add dairy to the mix, use feta cheese!
